Tzaziki

1 clove garlic, finely minced
1 tsp lime juice
½ cumcumber, seeded and minced
3 tsp parsley, finely chopped
3 tsp fresh mint leaves, finely chopped
1½ cup yogurt
Soak garlic in lime juice for 10-15 minutes to reduce the bitterness of the garlic. Combine all the ingredients and refrigerate.
