There is a good video on Youtube on how to made cucumber flowers, but these photos show the technique. The first photo shows the knife cutting through the cucumber (about 1-2 mm thick) but stopping just shy of cutting through it, about a millimeter. The second photo shows cutting completely through to remove one "petal" (similar to technique for butterflying a cutlet).
The slice is then opened up to create a "petal" which can then be placed into the hollowed out base.
